Enzymes are protein molecules that speed up chemical reactions without being used up. Each enzyme has an active site with a specific shape that fits a specific substrate, like a lock and key.
At low temperatures, enzyme activity is slow. As temperature rises, activity increases until an optimum is reached. Above the optimum, the enzyme denatures: its active site changes shape irreversibly and activity drops sharply.
